If you wish to remove a customer from the strategy, you can just unassign the customer from the strategy. Please see how to assign / unassign customers from strategies.

You can also switch a customer from chasing completely. Please see here. Please note that switching customers off for chasing will pause all strategies and Kolleno will not generate any reminders for this customer.
